OF BOILERLESS COMBI COOKING TO SMALLER OPERATIONS


Eloma to Debut Industry's First 2/3-Sized Counterop Combi At October's NAFEM Show

    Combi ovens have long been best suited to operations requiring a mid- to large-capacity unit, leaving smaller foodservice operations and restaurants without an appropriate equipment choice. Now, Eloma makes the benefits of boilerless combi cooking available to operations of all sizes with the introduction of its Joker model.

    The Joker is an electric-powered countertop unit with a capacity of six 2/3-sized steam pans, making it the first combi oven on the North American market at that size. Like all Eloma units, the Joker is a boilerless model that cooks with heat, steam or a combination of both. It offers users the ability to precisely control heat and humidity levels in the cooking chamber and can be used to rethermalize chilled foods.

    "The target markets for the Joker are QSR chains, smaller independent restaurants, C-stores, delis and supermarkets -operations that want to put out products fast and fresh, but don't need a full-sized combi oven," advised Mitch Cohen, Vice President of Cooking System Sales for Eloma.

    Just because the Joker has an unusually small footprint, that doesn't mean end-users come up short on features. The Joker was designed according to Eloma's core principles of energy efficiency, reliability and technical superiority. This model features a patented heat-exchange system that helps keep utility and water usage low, and provides an automatic self-cleaning system as a standard feature-a benefit many combi manufacturers exclude from all but their high-end products. The Joker is also equipped with a highly intuitive knob-based control panel that displays readouts for cook times, cooking chamber temperatures and core probe temperatures. Like all Eloma combis, the Joker is covered by a standard two-year parts-and-labor warranty.

    The Joker is offered with several options to meet operators' specific needs. A HACCP data-recording feature allows end-users to track food-safety practices, while a steam-condensing option controls odors and the need for costly exhaust hood modifications. The automatic self-cleaning feature can sanitize the unit during off-hours or between cooking cycles. Finally, the Eloma-exclusive Hot SpotŪ grill plate creates authentic char marks and healthfully dry-fries foods.

    The Joker will debut during the NAFEM Show, October 11-13, 2007 in the Atlanta Convention Center at booth #2905. The Joker will be available during the 4th quarter of 2007.
