Eloma Going Small With New 2/3-Sized Joker

   
 
Eloma, an AGA Foodservice Equipment company, entered 2007 with the goal of increasing its name recognition and market share in the United States. The firm has exceeded its goals in both these areas, and is now looking to build upon its momentum with the introduction of two new products.

    One of these is the new Joker combi oven. The Joker is an electric-powered countertop unit with a capacity of six 2/3-sized steam pans, making it the first combi oven in the North American market at that size. Like all Eloma units, the Joker can cook with heat, steam or a combination of both. It offers users the ability to control heat and humidity levels in the cooking chamber precisely and can be used to rethermalize chilled foods.

    "The target markets for the Joker are the QSR segment, C-stores, delis, supermarkets and smaller independent restaurants -operations that want to put out products fast and fresh, but don't need a full-sized unit," said Mitch Cohen, Eloma's vice president of cooking system sales.

    In keeping with Eloma's value proposition of energy efficiency, reliability and technical superiority, the Joker provides power- and water-saving performance achieved through a boilerless design and its patented heat-exchange system, which warms incoming water while cooling outgoing condensate. The Joker also comes with a standard two-year warranty covering parts and labor. The unit is equipped with a knob-based control panel that provides readouts for cook times, cooking chamber temperatures and core probe temperatures.

    The Joker is also offered with several optional features that enable it to meet operators' specific needs, Cohen stated. For instance, the Joker can be had with an automatic self-cleaning feature that can sanitize the unit during off-hours or between cooking cycles. An optional HACCP data-recording feature allows end-users to track their food-safety practices, while a steam-condensing option eliminates odors and the need for costly modifications to ventilation hoods. In addition, Joker combis can be ordered with Eloma's Hot SpotŪ grill plate that creates authentic char marks and healthfully dry-fries foods.

    The Joker will be available for shipment in the fourth quarter of 2007 and will debut at the AGA booth, # 2905, at the upcoming NAFEM Show, set for Atlanta from Oct. 11 to 13.
