What Makes Eloma The Combi Oven Of Choice?

    For the past 30 years, combi and baking ovens manufactured in Maisach, Germany, by Eloma, now the newest member of the Aga Foodservice Equipment division, have set a global standard for energy efficiency, technological innovation and fast, reliable cooking performance. Now, the Eloma boilerless combi line, with its one-touch automated controls, fast-recovery live steam system and high-efficiency fan-forced burners, is available to end-users, consultants and distribution partners across the U.S.

Leading Eloma's American roll-out is the Genius Series, available in 6- to 20-pan models. Genius Series models are designed for operators who demand the ultimate in control, versatility and consistency of results. The Multimax models provide the same base units as the Genius line, but use a classic function-choice control system. All Eloma combis are produced in accordance with the EN ISO 9001 global standard of quality management.

One of the most important features of all Eloma boilerless combis is their standard MULTI-ECO system, which allows end-uses to save up to 40% in water usage and 16% in energy consumption compared to equivalent-capacity models from competitors. How does this system work? The cold water entering to produce steam is pre-heated by out-going, hot condensate via Eloma's patented heat exchanger. This technology saves energy normally used to generate steam, as well as water that is used to cool condensate in traditional combi ovens. Thanks to these and other other standard features, such as a steam protection system and Autoclean, Genius combi ovens maximize operating time and reduce life-cycle costs.

Eloma boilerless combis are also equipped with simple, fingertip-control sensor keys, enabling end-users to easily access pre-set cooking programs, pre-programmed cooking instructions or additional functions. These can all be clearly viewed on the equipment's display monitor. Another key to easy and efficient combi performance is precise control of the cooking chamber climate. Eloma's Climatic® feature works with interior sensors that continuously measure temperature and moisture levels, actively influencing the chamber's humidity to ensure the best possible cooking results, time after time.

Fan-forced burners have been in use in industrial high-tech industries for years and now they can also be found on Eloma combis. With this heating system, optimum ratios of gas and air are mixed prior to combustion. The result is low gas consumption and emission rates combined with unsurpassed cooking performance. Eloma's exclusive fan-forced burners ensure maximum energy efficiencies for end-users, along with fast heat-up times and lower operating costs.

Consultants, dealers and reps should also know that Eloma's exclusive live steam system is maintenance free, as there is no boiler to scale up. As there is no need to fire up a boiler, Eloma combis heat and re-heat faster than conventional models, saving both time and energy.
