The Aga Foodservice Equipment division of the Aga Foodservice Group has announced the hire of Clifton Waters, a 20-year veteran in the foodservice equipment and supplies industry, as director of sales for the company's Western U.S. region. Waters, who joined AFE in early April, is based in Mesa, AZ, and reports to Mitch Cohen, the company's director of cooking system sales.
One of Waters' key responsibilities in his new position overseeing Western state sales for Victory, Infinity, Stellar and Eloma will be to "train, educate and generally develop our regional rep force," he stated. "Though Victory is a solidly established brand, known for its V2E values and ENERGY STAR® Partner of the Year award, Infinity's fryers, Stellar's boilerless steamers and Eloma boilerless combi ovens are just now taking their place in the national market. That's why I'll be working with rep groups, specifying consultants and dealers to explain these products' attributes and the comparative advantages they offer in areas such as reliability, energy efficiency and life-cycle use costs."

Not All ENERGY STAR® Fryers Are Created Equal
With energy costs continuing their upward rise, Infinity Fryers will be displaying its line of ENERGY STAR®-certified fryers at the 2006 National Restaurant Association Show.
ENERGY STAR certification confirms that a product has met stringent efficiency standards set by the EPA and the Department of Energy. Infinity is one of only four makers of gas-fired fryers whose products have earned this certification.
That does not mean, though, that all ENERGY STAR fryers are identical, noted Mitch Cohen, director of cooking system sales for Aga Foodservice Equipment.

The most recent addition to the Aga Foodservice Equipment group of companies is Eloma, the Maisach, Germany-based maker of high-end combi-ovens and baking equipment. At this month's NRA Show, at booth #1279, AFE will display its new Eloma Genius line, the industry's first affordable, high-performance combi oven.
Eloma introduced, and patented, the first boilerless combi system nearly 20 years ago. Since then, the company has continued to be a leader in the technological development of combi ovens. The Genius line was introduced in Europe in 2002 and incorporates heat exchanger technology to provide more efficient use of energy and water. The real eye-catcher, however, is the Genius' control system. Genius controls are easy to use and include state-of-the-art programmability for up to 300 cooking programs. These production programs can be pre-set with optimum cooking times, temperatures and humidity, and be accessed and initiated with just the touch of a button. Genius combis' programmability extends even further than that, however. "Not just cooking instructions, but actual recipes can be entered into every program," noted Bob McLoughlin, vice president of product management for Eloma. "If a chef is supposed to cook a batch of teriyaki chicken, for example, a Genius will tell him the quantity of chicken and teriyaki sauce to be used, how long the chicken should marinate and other directions, as necessary. A whole cookbook can be input into this one control."
